Sneaky Strawberry Pound Cake
This recipe is not straight from the show, unfortunately, but is supposed to be from a moment in Season 5 when Beth bribes a fellow resident at Grady Memorial with strawberries to be a distraction while she steals medicine for Carol.
We’ll break this recipe up into two parts: the pound cake, and the strawberry topping.
The pound cake involved using an electric mixer to combine butter, flour, salt, baking powder, sugar, eggs, vanilla, and sour cream. The ingredients were added one by one until it all came together smoothly.
Then the batter was divided between two loaf pans, smoothed out, and put in the oven for about 60 minutes, until a toothpick comes out clean.
I took ours out of the oven after 55 minutes, and it was slightly burnt along the edges.
The strawberry topping was very easy: just combine the sliced strawberries, sugar, lemon zest and lemon juice, mix well, and put it aside (in the fridge) until you’re ready to eat the cake.
To serve, the cake was sliced like a loaf and strawberries were spooned on top. The sugar broke down the strawberries to make a sort of syrup, which absorbed into the cake.
It didn’t look like much, to be honest, but oh boy was this delicious!
Taste: 10/10
This was so good, we didn’t even notice the burnt edges of the cake! Not to mention I made the cake two days early, before we left town for the weekend, and it was STILL amazing even though it wasn’t fresh. The cake would have been great on its own, but the strawberries really sweetened it up and added extra flavor!
Difficulty: Average
The cake itself does require some effort, and I highly recommend using an electric beater for this one. The strawberry topping was very simple.
Cost: Cheap/Average
You will probably need to purchase sour cream, strawberries, and a lemon. You may need to also pick up extra butter and/or eggs. Nothing too expensive, though.
