SHU Moldy Mystery Meat
This meal is referencing Season 1, Episode 9, when Piper is thrown in the SHU and discovers mold on the baloney she’s being fed.
This particular recipe doesn’t look like the moldy baloney from the show, but that’s probably a good thing. Plus, the skinny slice of baloney would not be enough food for an actual meal!
If you’re planning on trying this recipe, be aware that there’s a recipe for a sauce that goes with the meatloaf on the other side of the page! I didn’t turn the page when I wrote my grocery list, so I had to send my husband out last minute to pick up the rest of it while I got started.
To begin, I sauteed onion over the stove, adding spinach toward the end. The onion and spinach were then removed from the stove and lemon zest was added in. Then the whole mixture was left to cool.
The rest of the meatloaf is really simple: mix all of the ingredients together, form into a loaf shape, and bake in the oven.
The chimichurri sauce simply involved throwing the ingredients into a food processor, and then mixing with oil and red wine vinegar.
When the meatloaf was done, it was sliced life a loaf of bread and topped with the chimichurri sauce.
The spinach and the chimichurri sauce definitely give it a moldy appearance. This would be great as a Halloween meal!

My husband gives this a 10/10, because he LOVES garlic. I found the garlic a bit too strong in the chimichurri sauce. And the meatloaf itself was good, but wasn’t the best meatloaf I’ve had.

You will need to purchase an onion, spinach, lemon(s), ground beef, parsley, mint, and a shallot. You may also need to buy some breadcrumbs, eggs, cumin, oregano, garlic, red wine vinegar, and/or red chile flakes.
