Easy Chicken Broth for Busy Hobbits
This was indeed an easy chicken broth! But then again, most are!
All you need to do is throw the leftover chicken carcass from your dinner the night before (in our case, from the Roast Chicken Dinner) into a large soup pot, along with vegetables and herbs, and then fill the pot 3/4 of the way with water. Let it simmer, covered, for several hours, then strain out the chicken, veggies and herbs.
Voila! Chicken broth!
I made a ton, so a couple of containers went into our freezer to be pulled out as needed in the future.
Taste: 10/10
Of course it’s tasty! It’s basically impossible to screw up a broth.
We had leftover thyme, so that’s what I used in ours, but any herb could have worked. I kind of wish I saved a piece of rosemary for this recipe.
Difficulty: Easy
Just toss everything in and let it boil for hours.
Cost: Cheap
All you really need to buy are some extra vegetables, but depending on what’s leftover already in your fridge you may not even need those. This is really just a great way to use up extra vegetables, herbs, and leftover chicken.
