Gloria’s Rice and Beans

2e513a40-3359-11e6-9db1-3de9b3a48343_Gloria-1When Red is given permission to start a garden, Gloria is excited that she finally has access to cilantro to make some decent rice and beans!

The beans are made in a pot over the stove.  First, onion, bell pepper, and garlic are sauteed before adding cumin and cayenne pepper.  Once fragrant, rum and diced tomatoes are added and simmered for a few minutes.  Then the bean are added (I used a combination of red and black) and it’s left to cook for about 20 minutes.

Meanwhile, I got the rice started as well so they’d be done around the same time.

Once the beans are cooked, cilantro is added before serving over the rice.

Taste: 10/10

Would you believe this is actually my first rice and beans recipe?  And it was delicious!  I would definitely make this again!  The spices were perfect in my opinion.20190406_180151

Difficulty: Easy/Average

This recipe’s on the simpler side of average.  Once you chop everything up, it’s really just a matter of adding items to the pot at the correct time.

Cost: Average/Pricey

The cost goes up to Pricey only if you don’t already have rum on hand.

Ingredients include onion, green bell pepper, garlic, cumin, ground cayenne, rum, diced tomatoes, black and/or red beans, green olives (optional), cilantro, and white rice.
