Itsy Bitsy Teenie Weenie Yellow Polka-Dot Zucchini Burger
I have been dying to make this burger! I just love the name soooo much!!!
This burger, unlike the majority of the other burgers in this book, include sweet potato fries as part of the meal. So that’s where I began.
I peeled the sweet potatoes, cut them into a fry shape, and then let them soak in ice water to remove the excess starch prior to frying.
The fries are first fried at a lower temperature to “blanche” them before increasing the heat and cooking again. Blanching is supposed to make the fries soft, but that’s not the result I’ve had either time I’ve attempted to follow their directions. But they turned out okay anyway!
Next is the burger itself. The burger patties are shaped, the zucchini is sliced, and the bell pepper & dill are chopped. This recipe makes sliders, not regular-sized burgers, so I ended up with 6 patties instead of the usual 4.
While the burgers cook, I mixed the pepper, yogurt, and dill together to make the topping.
Though it doesn’t specifically say to do this, I opted to grill my zucchini in the same pan as the burgers so it picks up a little bit of the flavor
Now all that’s left is stacking the burgers! Burger bun, burger patty, grilled zucchini, yogurt sauce topping, and top bun.
And voila! Itsy bitsy teenie weenie yellow polka dot zucchini burgers!
Taste: 9/10
Very good, we really enjoyed these! I was surprised how much I enjoyed the dill in this recipe, since usually I’m not a very big fan. I didn’t love the sweet potato fries though.

There are a lot of different steps requiring different abilities, especially with those darn french fries, but overall it’s not overly complicated.

You’ll need sweet potatoes, oil for frying, ground beef, zucchini, yellow bell pepper, fresh dill, yogurt, and slider buns.
