Pete’s Pineapple-Marinated “Caribou” with Pineapple Salsa
I have been completely swamped at work these past couple of weeks and unable to find time to cook, but since today is my husband & my 2nd anniversary I HAD to cook something. And this recipe looked delicious!
I started marinating the meat yesterday, as the recipe calls for the steaks to be marinated 24-48 hours. The ingredients are all whisked together, and then poured into a ziplock bag over the steaks (I used beef steaks, but the recipe suggests caribou or venison as well).
When it’s time to cook, the salsa is made first. Pineapple, onion, bell pepper, jalapeño, and mint are combined, and then lime juice and salt are mixed in.
The steaks are cooked on the grill until done, and then served with the salsa on the side.
Taste: 10/10
This was AMAZING!! I was so surprised at how good that pineapple marinade tasted on steak. The 24 hours or marinating definitely helped; the whole steak was so flavorful!
Difficulty: Average
There’s nothing too challenging with this recipe, but you do need to know how to work a grill, and there’s quite a bit of chopping.
Cost: Average-Costly
Cost will depend on what’s already in your cupboard / fridge. There are a lot of ingredients, but they are fairly common for the most part and the rest are mostly fruit and veggies.
Ingredients include: pineapple juice, pineapple, lemon juice, lime juice, soy sauce, brown sugar, olive oil, ground ginger, dry mustard powder, salt, garlic, red onion, red bell pepper, jalapeño chile, mint, tabasco sauce, and steak.
