Red Velvet Pancakes
Happy Valentine’s Day everyone!
This morning we kicked off the Valentine’s weekend with some Red Velvet Pancakes from the Pioneer Woman. They just looked so good I couldn’t resist! This recipe is NOT on her website, so you’ll need to purchase the cookbook to find it.
Making the pancakes was pretty simple – mix dry ingredients, mix wet ingredients, then combine. At this point, melted butter is added in followed by red food coloring.
She suggests making the icing while the pancakes cook, but I made it before I threw the batter on the stove.
Then you cook the pancakes like normal! Just be careful not to cook them too long – you want the pancakes to stay pink, and not brown!
Taste: 10/10
These were AMAZING! They really did taste like red velvet cupcakes!

If you’ve made pancakes before, these are quite simple. If not, you’ll probably still be fine but a helpful thing to note is that you want to wait until bubbles are popping up on the surface of the batter before you flip them. I usually make sure the bubbles are seen throughout the top.

Cost will depend on what’s already in your fridge and pantry. You’ll need cake flour, baking powder, sugar, salt, cocoa powder, milk, buttermilk, eggs, vanilla extract, white vinegar, butter, red food coloring, powdered sugar, and maple syrup.
