Carol’s Quarter Chocolate Bar Cookies
You can actually find this recipe online here or here if you’d like to try them yourself. The first link is closest to the one in the cookbook, as the second one is less specific on measurements. I’m posting both in case one website goes down.
This is one of the recipes that Carol puts together using the limited supplies available to her in the Alexandria kitchen.
The applesauce, shortening, sugars, and vanilla are combined, and then salt, baking powder, baking soda and flour are added to the mix. The 1/4 chocolate bar is then melted and mixed into the dough as well.
That’s it. Just mix all the ingredients, and bake until set and lightly browned!
Taste: 8/10
These were good, but not a favorite. I think they need more chocolate, or maybe chocolate chunks, but of course Carol only had a 1/4 of a chocolate bar available to her in the first place!
Difficulty: Easy / Average
If you’ve made cookies before, these will be easy. If not, just be careful not to burn the cookies while at the same time not taking them out too early!

You will need applesauce, shortening, brown sugar, white sugar, vanilla, salt, baking powder, baking soda, flour, and 1/2 a large chocolate bar.
