They are quick to make (though do require a few hours of refrigeration time), the ingredients are pretty easy to find even during the COVID-19 hoarding frenzy, and best of all they’re pretty darn healthy!

All you need to do is mix all the ingredients together, press the mixture into an 8-inch pan lined with wax or parchment paper, and refrigerate for a few hours before cutting into bars.

Taste: 10/10

These were great!  A little stickier than I’d like maybe, but the taste is definitely worth it.  They mostly taste like peanut butter to me, but the sweetness of the dried apricot does come through without you actually having to taste dried apricot.  And my husband, who’s actually not a huge fan of peanut butter, has been reaching for these all day!

Difficulty: Easy20200325_184817

Just mix everything together and press into a pan!

There is a little bit of chopping for the pecans and apricots, and of course you’ll need to measure everything out.

Cost: Cheap / Average

You may already have several of the ingredients, which will bring the cost down.  You will need quick-cooking oats, chunky peanut butter, pecans, dried apricots, cinnamon, and honey.

  1. This is a review from the Star Wars Cookbook: BB-Ate. I cannot legally post the recipe, you’d need to purchase the cookbook.
