BB-8 Energy Balls
Another super simple recipe from the Star Wars BB-Ate Cookbook!
For this one, all the ingredients (minus the coconut) are tossed into a food processor and pulsed until combined.
The paste is then rolled into about 1-inch balls over a light sprinkling of flour, and then rolled in the shredded coconut (I only had sweetened coconut on hand, but really this is supposed to use unsweetened). I would actually skip the sprinkling of flour in the future, though, since eating uncooked flour is not good for you and it prevented the coconut from sticking as well as it could have.
And that’s it. Seriously. You can either eat the energy balls right away, or store sealed in the fridge for up to a week.
Taste: 8/10
These were good, but I thought the orange flavor was a little too overpowering.
Difficulty: Easy
These are so incredibly simple to make.
Cost: Cheap
You will need rolled oats, dates, peanut butter, honey, an orange, and unsweetened coconut.
Suggestion:
Skip the light layer of flour when rolling the mixture into balls. It’s not needed. It prevents the coconut from sticking to the mixture, and frankly is unsafe to eat since the flour is left uncooked.
