“Light It Up” Lemon Curd

0ec674f89d7e9b4b1f982881f5d48fdaThis delicious recipe takes its name from a quote by Poe in the “The Force Awakens” film: “Alright.  Let’s light it up.”  OR it could be from Cassian Andor in “Rogue One” (who simply says, “Light it up.”).

The recipe is super simple to make.

Egg yolks, sugar, lemon juice and lemon zest are mixed in a saucepan and cooked over medium heat until it thickens and bubbles.  The recipe suggests 6 minutes, but mine starting bubbling quite a bit by 3 minutes.  I let it go one minute more, reducing the heat to low, before removing from the stove.

At this point, butter is added in 1 tbsp. at a time until it melts.

The mixture is then transferred to a glass bowl and plastic wrap is pressed on top (like you would with pudding) before it’s stored in the fridge for a couple of hours or overnight.

The recipe suggests eating as a topping on toast, biscuits, pancakes, or waffles.  We had ours on top of granola and strawberry yogurt, with some honey squeezed on top.  I put the rest in a small container for later.

Taste: 10/10

I’ve never made or even tasted lemon curd before, but this was delicious!  I will definitely make it again!  I would even eat it by itself – yum!

Just mix everything, cook until thick, and then stir in butter and refrigerate.

Cost: Cheap

You’ll need eggs, sugar, lemon and butter.
