Claire’s Brown Sugar Icebox Cookies

Manny: Those cookies smell like heaven. Your own recipe?
Claire: No, I just throw ’em in the oven.
Manny: And added the secret ingredient of caring?
Claire: Sure.

These are a convenient cookie to have prepped and ready on hand, so when you’re craving some cookies you just cut them up and pop the in the oven.

They’re easy to make, too! Just mix the dry ingredients in one bowl, the wet in another, and then combine.

The dough is then rolled into a log, wrapped in wax paper, and left to freeze until you’re ready to bake them.

The final step is just to slice them up before putting on a baking sheet and baking.

Taste: 8/10

They weren’t my favorite cookie, but they still were quite good. I’d probably make them again, but mostly because they were easy to prep and convenient to have on hand when there’s an “I need a cookie” emergency!

Difficulty: Easy

You’ll need a hand mixer for best results, but mostly this recipe is just combining ingredients. I’d say the trickiest part is cutting the cookies evenly!

Cost: Cheap

You’ll need flour, baking soda, salt, butter, brown sugar, vanilla extract, and egg. All very common and cheap ingredients.
