Southwestern Potato Skins

Since it was just my husband and I together for the Superbowl this year, I only made one snack from The Pioneer Woman Cooks: A Year of Holidays…Southwestern Potato Skins! A simple twist on the classic potato skins.

The skins are prepared first baking the potatoes, scooping out the middle, and the baking the skins again so they’re nice and crispy. While the potatoes baked, I prepped the rest of the ingredients.

Then everything is loaded into the skins!

Taste: 10/10

This was delicious, and I would 100% make them again! I particularly loved the avocado and corn with the ranch dressing. Yummy!

Difficulty: Average

This is a fairly simple recipe, with the trickiest part being scooping out the potato – you want to scoop enough so you can fit a lot of ingredients, but not too much that you cut through the skin.

Cost: Average

You’ll need potatoes, black beans, tomatoes, corn, avocado, ranch, and green onion.
