Named for the planet Takodana, these breakfast tacos are inspired by the lush green planet and filled with spinach!
The filling is super simple to put together – saute the spinach, season with salt and pepper, and then remove.
Then the salsa is cooked in the same skillet, eggs are added in, and finally the spinach is thrown in as well.
Last step is to add the filling to warmed tortillas, along with some cheese!
To be honest, the measurements were a bit off on my version. I told my husband not to use the spinach since it was for this recipe, but he did anyway so I didn’t have as much as I should have. The tortillas were also too small.
That being said, I’m surprised how much I liked these considering the spinach. The salsa being cooked into the egg was delicious!
This is a very simple recipe, tasty, and would be difficult to screw up too badly.
You’ll need corn tortillas, spinach leaves, green tomatillo salsa, eggs, and Monterey Jack cheese.
