Cam’s Healthy Tabbouleh-Style Rice Cucumber Rounds
The instructions for this recipe are very simple: combine ingredients, toss gently, and spoon onto cucumber rounds. BUT there’s a lot of prep required!
Before you start, you’ll need to cook rice, roast red pepper, grate cheese and lemon zest, chop herbs and vegetables, mince garlic, and slice a cucumber.
The prep definitely took a while, but it was so worth it!
These were so good and so healthy! I especially loved the salty capers.
While it does take a while to prep the ingredients, it’s all very simple overall.
You will need brown rice, Asiago cheese, parsley, red bell peppers, fresh oregano, capers, lemon, crushed red pepper, garlic, and cucumber.
