Summer Thyme Burger

Wow, has it really been almost two months since I last posted?! Obviously things have been a little crazy around here, but I’m excited to get back to cooking, beginning with this burger that I have been waiting to make for AGES! We finally have a barbecue, and watermelon are still in season.

I began with the watermelon, cutting it into thick slices and letting them marinate in salt for 15 minutes. While they sat, the ground beef was mixed with feta, rosemary and thyme, and then formed into patties.

The watermelon slices were rinsed, dried, and then thrown on the grill along with the patties. The patties were a bit crumbly and challenging to flip.

The burgers are then assembled: bottom bun, lettuce, watermelon, burger patty, feta, mayo (optional), and top bun.

Taste: 9/10

The watermelon didn’t really do anything for me, but the patties were sooooooooo good! I loved the feta / rosemary / thyme combo!

Difficulty: Average

Most of the recipe is pretty easy, but it’s tough to keep the burger patties together while assembling and while cooking.

Cost: Average

You’ll need watermelon, feta, rosemary, thyme, ground beef, lettuce, mayo (optional), and buns.
