Yogurt, Brown Sugar and Berry Parfaits

Okay, so it’s a little late in the day to post this Mother’s Day breakfast recipe, but I swear I did make it for breakfast!  This Mother’s Day I actually received a few messages myself from some friends and family, as I’ll be a mom in October!  So I spent this morning putting final touches on the nursery after spending yesterday painting.

These parfaits are super easy, but you’ll need to get the Pioneer Woman’s “A Year of Holidays” cookbook in order to get the recipe, as it’s not one found on her website.

First, the yogurt, heavy cream and vanilla is mixed together, spread flat, and sprinkled with the brown sugar.  Then it sits in the fridge for about 20 minutes until the brown sugar begins to dissolve.

Then you simply layer the yogurt mix with raspberries and blueberries!

Delicious!  The brown sugar really sets this recipe apart from other parfaits I’ve made / eaten in my life.

Difficulty: Easy

Not difficult at all!

Cost: Cheap

You’ll need plain Greek yogurt, heavy cream, vanilla extract, brown sugar, blueberries, and raspberries.
