Black Bean Soup

This is such a quick and easy soup to make, and absolutely delicious!

Literally the steps are – throw everything into a heavy pot and let simmer for 30 minutes, then blend about 1.5 cups of the soup and mix it back in.  Top with optional sour cream, cilantro, red onion, and/or hot sauce.

That’s it!

Taste: 10/10

I loved this and would definitely make it again!  I had mine with sour cream and cilantro, and it was perfect.

Difficulty: Easy

Just throw everything into a pot, stir, and simmer.  Only added step is blending up a little bit of the soup in the blender before mixing it back in.

Cost: Average

You’ll need chicken broth, canned black beans, a yellow onion, Spanish-style tomato sauce, garlic cloves, coriander (optional), cumin, and optional toppings (sour cream, red onion, cilantro and hot red pepper sauce).
